Ivan Pun To Open The Pansodan Pop-Up In Hong Kong This March

Having recently set up a Rau Ram pop-up at The Standard Hotel in West Hollywood earlier this month, Ivan Pun is set for another culinary project, as he presents a one-month stint end of March 2019. The young entrepreneur’s The Pansodan Hong Kong pop-up will deliver a wide range of traditional Burmese fare with a contemporary touch.

The Southeast Asian pop-up will occupy the space where Fish School formerly resided. The dining room will be transformed with a vibrant palette of colours, including hand-painted wallpapers featuring jungle flora and fauna by local artist Laura Cheung of Lala Curio, while the abundance of rattan panels, cane chairs and red banquettes bring reminders of a traditional brasserie concept that inspired Pun for his pop-up.

As a champion of Burmese culture from art to dining, Pun has ensured that The Pansodan’s food offerings are inspired by food traditions of China, India, and Thailand, all of which Myanmar shares its borders with. The pop-up invites guests to partake in an exploration of the country’s rich food heritage in forms of bites, salads, noodles, meats, and seafood dishes that highlight the refreshing melange of fresh herbs and flavours from ingredients such as turmeric, tamarind, lemongrass, and ginger.

You can expect a range of signatures including classic Burmese tea leaf salad, mohinga (fine noodles in fish broth with tamarind and turmeric), as well as Rakhine fish curry, and pork curry, best paired with herbaceous cocktails such as The Yangon 75 (gin, lemongrass and champagne) and Mandalay Spritz, a zesty twist of the original with mint and pomelo. The Pansodan Hong Kong pop-up will run for a month starting late March with dinner options available from Tuesdays to Sundays, as well as brunch service on Saturdays and Sundays.
